Unless you live in the humid, warm South that may be difficult. A bathroom where the family takes hot showers might be a good choice, maybe set up a small space heater in there for the week to keep the temp close to 80. Next move them to a cool room, 50 -60 degrees for another 2 months. This converts starches to sugars, making them sweeter.
